Kale Salad with Lemon Vinigarette | Pure Gorgeousness!!

So one of my goals for this challenge was to get more creative in the kitchen....make more interesting meals and I think I made some decent progress on that goal this week! Today I am sharing with you an absolutely delicious salad that my husband and I snacked on all day this past week. While it is high in fat, the fat sources are natural and just make sure you eat in moderation or reduce ingredients. But friends, it definitely is a treat and I really enjoyed throwing it together!

Kale Salad with Lemon Vinaigrette

- 4 cups kale
- 1/2 cup cooked quinoa
- 1/2 cup pomegranate arils
- 1/4 cup crumbled goat cheese
- 1/2 cup chopped pecans
- 1 diced avocado

Optional: 2 cooked chicken breast, diced ( I used lemon pepper chicken)


- 1/4 cup apple cider vinegar
- 1/4 cup extra virgin olive oil
- Zest of a lemon
- juice from a lemon (at least 3 tablespoons)
- pepper to taste

Add salad ingredients in a large bowl. Whisk olive oil into cider vinegar along with lemon zest, juice and pepper. Pour onto salad and gently toss. Voila!
