Cinnamon Roll Protein Mug Cake

Can I tell you? This is my all time favorite mug cake. And don't judge from the pictures. I don't have the best iPhonography skills haha!! But anywho, I could eat this mug cake all the time...it's sweet, it's crunchy and it's delicious. You have to try it!


First, you will need Vanilla Protein. I have only tried this recipe with Zeal Vanilla Creme Protein so I can only attest to how good it is with this brand. I would never dare try it with my husband's protein....it's gross and full of fake stuff. So I suggest you get some decent protein! Zeal is a good one, hint hint :)

The remaining ingredients you are sure to have on hand; eggs, banana, coffee, almonds (crushed), stevia, cinnamon and baking powder. Easy peesy, right? Perfect for any time of the day!

Cinnamon Roll Protein Mug Cake

1/2 Banana, mashed
1 scoop Zeal Vanilla Protein
2 egg whites, in separate bowl
1/8 tsp baking powder
2 tbsp strong coffee
1 tsp cinnamon

Almond Crunch

7-8 almonds, crushed
1/8 tsp cinnamon
1 tsp egg whites
dash of stevia

1. Start by separating your two egg whites into a bowl.
2. Make the almond crumble first by combining 1 tsp of your egg whites, crushed almonds, cinnamon and stevia to taste ( I use about 1/2 tsp)
3. Mash banana in your favorite coffee mug. I use a beater from my hand mixer to mash it manually.
4. Mix in the coffee with the mashed banana.
4. Add protein, remaining egg whites, baking powder and cinnamon and mix well.
5. Spoon almond crumble into mug.
6. Pop in the microwave and cook for about 1 minute to 90 seconds. This will all depend on your machine. I watch mine after about a minute so that it doesn't come out of the mug. You also don't want to cook it too long, it may blow up!
7. Let sit in microwave for about a minute.
8. Dump onto a plate or eat directly out of your mug. Voila! Delicious and healthy mug cake!
